McIntosh College To Host & Compete in Culinary Competition

January 28th Event Will Select New Hampshire Champ

January 28, 2007 - Dover , New Hampshire -

The Atlantic Culinary Academy at McIntosh College will host the state round of the 2007 American Culinary Federation Jr. Team Culinary competition on January 28, 2007. The school’s competition team will also participate in the day-long event.

This event will be held at the McIntosh campus in the instructional kitchens of the Atlantic Culinary Academy. The team’s head coach, Chef Instructor Michael Ciuffetti, said, "The competition will be in two parts. The first section is a skills set, in which the teams butcher a chicken and fish for preparation in the entrees, as well as showing vegetable preparation and pastry skills. In the second round, teams go head-to-head in cooking a four-course meal."

Chef Ciuffetti added, "The competition is a test of skills, management and team work. Those who excel in this type of environment learn what it takes to compete not only in the kitchen, but in their careers."

The American Culinary Federation, Inc, (ACF) is the premier professional chefs' organization in North America, with more than 240 chapters nationwide and 19,000 members. The organization promotes national culinary competitions at many levels, including the junior competition for students.

The winner of the January 27th state competition will represent the state of New Hampshire at the regional event in Pittsburg in early March.

McIntosh’s team is coached by Certified Executive Chef (CEC) Instructors Michael Ciuffetti; Todd Sweet, CEC; and Murray Long, CEC. The five-member team includes the following students:

  • Quintin Mapes, from Ovid, Michigan
  • Nathan Paquin, from Londonderry, NH
  • Dick Felch, from East Hampstead, NH
  • Rebecca Cail, from Rochester, NH
  • Christina Weaver, from Vorheesville, NY
  • Paul Couch, from Vineland, New Jersey
