McIntosh Atlantic Culinary Academy Offers Food and Health Lecture

Dover, NH - (November 5, 2007) On November 8, McIntosh Atlantic Culinary Academy (MACA) will welcome Dr. Charles Santerre, Professor of Food Toxicology from the Department of Foods and Nutrition at Purdue University, for a speaker series on food and health. Dr. Santerre will present two sessions at MACA, located at 181 Silver Street in Dover, NH. The two conferences will be: “Seafood: Balancing the Risks and Benefits” from 3:00 pm - 4:00 pm and “Biotech Crops: Are They Safe to Eat?” from 7:00 pm - 8:00 pm.

The seafood session of the series will deal with recent concerns raised about the safety of eating fish. Experts warn about the dangers of fish to fetuses, nursing infants and young children due to pollutants in various seafood products. Dr. Santerre will review the benefits and risks of ingesting seafood.

The second piece of the series will review biotech crops and genetic engineering of food. Dr. Santerre will review the concerns over food biotechnology and its impact on consumers.

“We’re very excited that Dr. Santerre is presenting on food and health at McIntosh Atlantic Culinary Academy,” Executive Chef Jim Gallivan said. “We like to teach our students that there is more to food than simply cooking!”
