McIntosh Atlantic Culinary Academy joins Kittery Trading Post In Valentine's Day Display

Dover, Maine – (February 11, 2008) McIntosh Atlantic Culinary Academy (MACA) is warming hearts at Kittery Trading Post in Kittery, Maine for the month of February by creating a chocolate moose for display. The edible creation, which was constructed by chef instructors Steve James, CMB and Brian M. Coffey CEC, AAC, is made of pastillage (molding sugar) and molding chocolate. Timothy Leonard, a MACA student, assisted the chefs in the presentation which was made from 14 pounds of confectionary sugar and six pounds of molding chocolate. The design of the animal was screened onto the pastillage using powdered chocolate while all other adornments are made from sugar.

“It is incredible to see the work produced from chocolate,” said Julie-Lynn Belon, events manager for Kittery Trading Post, “The precision and artistry the MACA chef instructors and students put to use to create such a display is amazing!”
